Bamboo rolling mats are used in the preparation of sushi rolls. Once the rice and ingredients are placed on a sheet of roasted seaweed, the rolling mat is used to form the roll evenly.
For large sushi rolls, nori may be placed on the rolling mat directly, rice and ingredients added and then rolled with the seaweed on the outside.
For inside out sushi rolls, the half sheet sushi rolls are made with the rice on the outside. When preparing inside out rolls, the rolling mat should be tightly covered with plastic wrap so the rice does not stick to the mat.
It is best to wash bamboo rolling mats with warm, soapy water and a sponge or similar method. The two larger size rolling mats have thicker bamboo slats and twine binding.
